Instructions

Traditional Preparation Instructions

  1. Bring 3 ounces of spring or freshly drawn filtered water to between 173 - 175℉.
  2. Measure between 1/2 - 1 teaspoon of matcha powder for thick tea thick tea (koicha) or thin tea (usucha), as well as flavor preference. Thick tea (koicha) is the usual style for ceremonial grade matcha.
  3. Sift the matcha powder in the tea bowl, gently pressing any clumps through the sifter.
  4. Slowly add water to the bowl in stages.
  5. Using a bamboo matcha whisk, vigorously whip in a "M" shaped motion until the tea is aerated and a creamy foam has formed on the surface.
  6. Repeat steps 4-5 for a total of 3 times or until all water has been added.
  7. Add sweetener for taste (optional).
  8. Enjoy every sip!

Pro-tips:

  • Make sure your water is the correct temperature, because if the water is too hot your tea will turn out bitter. Using the correct temperature will also ensure that the healthy compounds and caffeine will be extracted without burning or damaging the matcha.

I have been a green tea drinker for many years, drinking 4-5 cups a day. This is the first time I've tried matcha green tea and I'm hooked. Now I can't imagine not starting my day with it. Because I have celiac disease (severe gluten intolerance) I have hesitated to buy any of the wheat and barley green drinks, even though they say they are gluten-free. However, now with this potent green matcha tea drink I feel I am not missing out. It is very smooth, not bitter at all (though bitter doesn't bother me) and I put only a tiny dusting of stevia in it. Probably I could drink it plain. When I purchased this I also purchased the Kiss Me Organics Organic Green Tea Powder for culinary purposes to compare the two. The ceremonial tea is so much more expensive I wanted to see if there was a significant difference. I took a picture of a quarter teaspoon scoop of both the ceremonial tea and the culinary grade tea in my cup. Sorry that the picture is a little blurry (and for the green tea ring in my cup) but you can definitely see the color differences. The ceremonial is brighter green, making a slightly darker green tea, and the taste is a bit smoother. But I also drank the culinary green tea by itself and it was just fine to me. Probably if I hadn't compared the two, I would drink the culinary grade and be perfectly happy seeing that it is still much more green and not any more bitter than regular bagged green tea plus has the additional nutritional benefits. My husband also likes the matcha green tea and when I tested to see if he noticed which tea I gave him, he couldn't tell the difference. But then he can't tell when I get my haircut either. Overall, I can definitely see a difference in the ceremonial grade tea that probably supports it's more expensive cost. I plan on keeping it stocked and will probably continue to combine it with the culinary grade to stretch it out a bit.(2016) Comment: I just wanted to comment, looking back on this post, that I probably shouldn't have been drinking quite so much green tea. I found I have a magnesium deficiency, and probably other minerals as well, and part of that could be because I drank too much tea. :/ But, magnesium supplements are easy to come by and work wonders for one's health (see my other review for "The Miracle of Magnesium" book). So now I drink my green tea "in moderation." Even too much of a good thing can be a bad thing. Cheers!
