The Way of Tea and Justice: Rescuing the World’s Favorite Beverage from Its Violent History

What started as an impossible dream-to build a café that employs women recovering from prostitution and addiction-is helping to fuel an astonishing movement to bring freedom and fair wages to women producers worldwide where tea and trafficking are linked by oppression and the opiate wars. Becca Stevens started the Thistle Stop Café to empower women survivors. But when she discovered a connection between café workers and tea laborers overseas, she embarked on a global mission called “Shared Trade” to increase the value of women survivors and producers across the globe. As she recounts the victories and unexpected challenges of building the café, Becca also sweeps the reader into the world of tea, where timeless rituals transport to an era of beauty and the challenging truths about tea’s darker, more violent history. She offers moving reflections of the meaning of tea in our lives, plus recipes for tea blends that readers can make themselves. In this journey of triumph for impoverished tea laborers, hope for café workers, and insight into the history of tea, Becca sets out to defy the odds and prove that love is the most powerful force for transformation on earth.

Breville BES840XL the Infuser Espresso Machine

Included dual wall filters provide excellent practice for budding baristas The dedicated hot water outlet makes brewing Americanos and hot chocolate easy. Included single wall filters provide a more challenging experience for those who have already mastered the art of espresso Why the Breville BES840XL Infuser Espresso Machine? For espresso with a well-balanced flavor, flavor needs to be drawn evenly from all the coffee grinds. What is the best way to prepare the grinds for an even extraction? Rather than starting with bursts of high pressure, the Breville Infuser Espresso Machine starts with steady, low pressure to gently expand the grinds. This helps fills in any cracks, gaps, or irregularities in the coffee puck before full pressure is applied, so even pressure is applied to all parts of the coffee puck and optimal flavor is extracted. BES840XL Features The BES840XL has both automatic features, like temperature settings, and programmable features like volumetric control. The key features that set it apart from other espresso machines in its price range are the pre-infusion technology, the thermocoil heating system, and PID temperature control technology. See chart below for details. Other helpful features include a cup warmer on the top of the machine and a feature that removes excess water from the filter basket after coffee extraction, so the used grounds form a dry puck for quicker cleanup. The machine goes into ‘Sleep Mode’ after 1 hour and automatically shuts off after 3 hours. There is extra-tall cup clearance for brewing directly into travel mugs. Other touches include an ‘Empty Me!’ indicator that lets you know when the removable drip tray is full and a ‘Clean Me’ cleaning alert. The storage tray houses the included accessories. Lastly, all parts that come in contact with water and coffee are BPA free. Click on image to view larger Product Features The 61 fl. oz. (1.8 L) removable water tank is a top-fill tank with a handle. It has a replaceable water filter to reduce impurities and scale. The 1600W thermocoil heating system circulates the water through a heated coil, heating water ‘on demand’ for better temperature consistency. It also uses PID technology to regulate the temperature. A 54mm stainless steel portafilter with commercial style spouts and a 54mm tamper are also included for expert tamping control. The tamper is stored magnetically on the machine, but is easily removable for tamping. The dry puck feature removes excess water from the ground coffee in the filter basket for easy disposal of the coffee puck. The espresso pressure gauge helps you monitor espresso extraction pressure, so you know whether the espresso is being over- or under-extracted. The volumetric control functionlets you set shot volumes. Use either the preset volumes or manually over-ride them with your own preferences. Once you figure out what volumes you prefer, you can program it to remain at your customized setting. The dedicated outlet for instant hot water (for making Americanos, hot chocolate, and for warming cups). The steam wand is used for effortless milk frothing for making lattes and cappuccinos. It is made of stainless steel and swivels 360 degrees to accommodate different size frothing jugs. The auto purge function automatically adjusts the temperature of the water used for steaming milk and extracting espresso. The function automatically begins to cool the boiler to the optimal temperature for espresso extraction after using the steam wand. The removable drip tray is partitioned for both wet and dry spills, with an ‘Empty me!’ indicator for when it’s full.

Cha Dao: The Way of Tea, Tea as a Way of Life

In China, the art and practice of drinking tea is about much more than merely soaking leaves in a cup of hot water. The tradition is rooted in Daoism, and emerged from a philosophy that honoured living a life of grace and gratitude, balance and harmony, and fulfilment and enjoyment – what the ancient Chinese called Cha Dao, or the Way of Tea. Cha Dao takes us on a fascinating journey through the Way of Tea, from its origins in the sacred mountains and temples of ancient China, through its links to Daoist concepts such as Wu Wei or non-striving and the Value of Worthlessness, to the affinity between Tea Mind and the Japanese spirit of Zen. Interspersed are a liberal helping of quotes from the great tea masters of the past, anecdotes from the author’s own trips to China, and traditional tea stories from China and Japan. The unique health benefits of tea are also explored, and a chapter is devoted to describing the history, characteristics and properties of 25 different tea varieties. This book will interest tea lovers, as well as those who want to learn more about tea culture, Daoist and Zen thought and practice, and Asian history and culture.

Buzz: The Science and Lore of Alcohol and Caffeine

Alcohol and caffeine are deeply woven into the fabric of life for most of the world’s population, as close and as comfortable as a cup of coffee or a can of beer. Yet for most people they remain as mysterious and unpredictable as the spirits they were once thought to be. Now, in Buzz, Stephen Braun takes us on a myth-shattering tour of these two popular substances, one that blends fascinating science with colorful lore, and that includes cameo appearances by Shakespeare and Balzac, Buddhist monks and Arabian goat herders, even Mikhail Gorbachev and David Letterman (who once quipped, “If it weren’t for the coffee, I’d have no identifiable personality whatsoever”).Much of what Braun reveals directly contradicts conventional wisdom about alcohol and caffeine. Braun shows, for instance, that alcohol is not simply a depressant as popularly believed, but is instead “a pharmacy in a bottle”–mimicking the action of drugs such as cocaine, amphetamine, valium, and opium. At low doses, it increases electrical activity in the same brain systems affected by stimulants, influences the same circuits targeted by valium, and causes the release of morphine-like compounds known as endorphins–all at the same time. This explains why alcohol can produce a range of reactions, from boisterous euphoria to dark, brooding hopelessness. Braun also shatters the myth that alcohol kills brain cells, reveals why wood alcohol or methanol causes blindness, and explains the biological reason behind the one-drink-per-hour sobriety rule (that’s how long it takes the liver, working full tilt, to disable the 200 quintillion ethanol molecules found in a typical drink). The author then turns to caffeine and shows it to be no less remarkable. We discover that more than 100 plant species produce caffeine molecules in their seeds, leaves, or bark, a truly amazing distribution throughout nature (nicotine, in comparison, is found only in tobacco; opium only in the poppy). It’s not surprising then that caffeine is far and away the most widely used mind altering substance on the planet, found in tea, coffee, cocoa, chocolate, soft drinks, and more than 2,000 non-prescription drugs. (Tea is the most popular drink on earth, with coffee a close second.) Braun also explores the role of caffeine in creativity: Johann Sebastian Bach, for one, loved coffee so much he wrote a Coffee Cantata (as Braun notes, no music captures the caffeinated experience better than one of Bachs frenetic fugues), Balzac would work for 12 hours non-stop, drinking coffee all the while, and Kant, Rousseau, and Voltaire all loved coffee. And throughout the book, Braun takes us on many engaging factual sidetrips–we learn, for instance, that Theodore Roosevelt coined the phrase “Good to the last drop” used by Maxwell House ever since; that distances between Tibetan villages are sometimes reckoned by the number of cups of tea needed to sustain a person (three cups being roughly 8 kilometers); and that John Pemberton’s original recipe for Coca-Cola included not only kola extract, but also cocaine. Whether you are a sophisticated consumer of cabernet sauvignon and Kenya AA or just someone who needs a cup of joe in the morning and a cold one after work, you will find Buzz to be an eye-opening, informative, and often amusing look at two substances at once utterly familiar and deeply mysterious.
