The traditional preparation is to simply whisk the Matcha powder with hot water, then enjoy. What’s the difference between Culinary and Ceremonial grades? Simple: Culinary grade is meant for mixing into recipes as an ingredient, while Ceremonial grade is meant to be prepared traditionally as a tea (just mixed with hot water and whisked). The Fujian Province of China is the birthplace for the semi-oxidized Oolong teas. Oolong teas, aka wulong or black dragon, are made from large leaves that are produced in the late Spring. Unlike other types of tea that contain the top leaves and the buds of the bush, oolong teas are large well formed leaves that will sometimes also contain the stem of the bush. Oolongs differ from green, black and white teas by the method of processing and are the most labor intensive tea to produce. Each type of Oolong varies in the percentage of oxidation and the method in which it is processed (some are twisted, tippy leaves, some are cut, some are rolled into small balls). From China comes this invigorating, full-bodied Oolong tea that has a lingering flavor with a taste of earthiness.

Known as ‘Bai Cha’ in Chinese, white teas are made only from the newly sprouted ‘buds’ of the tea plant. These buds have silvery white hair ‘down’ that provide a honey texture to the brew. The buds are ‘heat braised’ in covered pans or dried in direct sun with minimal or no oxidization. Very low in caffeine content. Original White teas are native to areas of China’s Fujian province.
