The area of Kurseong “The Land of White Orchids\" has a number of tea estates known to make light, fragrant black teas. New Technique The leaves are baked in a rotating tunnel roaster at a high temperature for short periods. In among roasting, the leaves are gently rolled sideways to develop their taste. This strategy eliminates the slight astringency typically located in teas from Kurseong. In Taiwan, this type of tea making is similar to the approach for generating \'Bai Hao Oolong\'. Although Kali Cha is a hardy tea and maintains its taste for a number of months, it is very best loved during early to late summertime. Taste Profile: Smooth taste with distinct, toasty aromas of cocoa and peanut shells. It is a really forgiving tea for brewing and tends to make a tasty iced tea.
